At the main entrance of St Clare's, meet your local guide and proceed on your 1-hour guided tour of the vineyards, which date back to the 1200s. Walk through the old-growth vines and learn about how the wine here is still harvested and processed by hand; the terrain doesn't allow the use of machines. View a wine house from the 1700s where the wine is processed, then proceed to the cellar for a tasting. You'll receive 2 bottles of the vineyard's best varietal; it's up to you whether you'd like to taste on the spot or take them with you.
