Make your way to Green Olive at Red Hill, located at 1180 Mornington Flinders Road, Main Ridge. Arrive at least 10 minutes before the class, which will begin promptly at 9am, for your course registration. Be sure to bring a cooler to safely transport the sausages home at the end of the class. You'll be greeted with a cup of coffee and a chef's apron to wear and take home with you.
During the duration of the 4-hour class, you'll learn about which are the best cuts of meat to use in sausage, how to grind meat, and which seasonings to use in the creation of your unique flavor profile. Fill natural sausage casings, choose herbs and spices from the garden, and learn how to cook sausages by different methods. The course is led by an experienced chef.
Once your labor of love is finished, wrap up your experience with a meal paired with a glass of Kelpie Bridge wine. Gaze out over views of the duck pond, the kitchen garden, and the surrounding vineyards as you dine.
