This was a great tour and experience. We did go with the chef to the local market and this I thought should be a must by all, but was provided as an option. It was nice for the chef to point out what was good and what was bad. He taught us how to pick the freshest Red Snapper the redder the eyes the better and one other secret. It was nice to see the real parts of the country and where your meal comes from. I will mention we were staying where most are in Nusa Dua south of South Kuta and it cost us 250,000 more Rupiah to get here. So that is one reason I cannot give this the full 5 stars. I say this because this wasn't brought up when we initially booked but only a day before the tour was to happen. Not good communication on this ... just be up front with the charges ... most will still pay, but don't be shady about it. I thought the chef was really good about explaining all the ingredients we were using and very detailed in how to prepare it. I was nice he had the recipe to follow along with. Something else that was nice ... I actually don't like Curry and he used ingredients that didn't include this and made the food authentic and delicious. We were given many opportunities to participate and be involved in the creation of the dishes. The staff were exceptional in helping us as well as the chef deliver a great experience and delicious food. They were also instrumental in preparing an elegant dining area to eat our finally prepared dishes. We were all very full and happy by the end.
In the end it was great to receive our cooking aprons as roots, spices and ingredients we cooked with as well as a certificate we completed the class.
Chef Wayan was fabulous. The trip to the market was very educational and gave you a good local feel. The chef took our allergy issues into account and we had the most wonderful class and meal. We have had cooking classes around the world and this rates as one of the best.
Cant say enough about how AMAZING this class was! It was set at the beautifully set Amala Spa and Hotel. The chef as very knowledgeable and did a absolutely fantastic job teaching us about the various spices, walking is thru each menu item, and adjusting the meals based off of our preferences i.e. food allergy and heat tolerance. We prepared 3 dishes that turned out to be delicious and then were able to enjoy our meal by the pool. Only warning is that the class is taught outside so make sure you bring mosquito repellent : I highly recommend this tour for anyone looking to learn more about the Balinese cuisine and enjoying a wonderful dinner prepared by YOU!
What the perfect way to learn about Balinese cuisine! We discovered the secret ingredients, and were amazed by our own results! We visited the Jimbaran fish market to buy fresh products including our fish. The cooking class is placed in the beautiful settings of The Amala Hotel, where our patient and highly knowledgeable Chef taught us to prepare and cook a Michelin-worth lunch - Base Gede spicy paste, Tum Ikan steamed fish wrapped in banana leaf, traditional Lawar Salad, and Dadar Gulung coconut pancake. We had an amazing experience from the beginning to the end, and we recommend this class to learn about traditional Balinese cooking. The market visit is a must-see too, make sure to include it in your plans!
I was not sure what to expect from this cooking class and wanted to include the market ingredient shopping to have the full experience. Chef Mangde and our driver for the market came to pick my family and me up at our hotel. We first spent time at a local market, shopping for the different ingredients of the meal which was a perfect addition to the experience. Though the market on that day was far from fully crowded due to a holiday, we had the chance to see and get all that we needed. Mangde spent time explaining us the different vegetables and spices, some traditional western ones like onions, garlic, as well as some more exotic ones like three types of roots similar to ginger, lemongrass, super long string beans, local red peppers, shrimp paste and of course coconut and banana leaves! We also spent some time crawling through the fish market in search for our fish of the day. After that, we were transferred back to The Amala hotel where an outside area was arranged as a temporary kitchen for the class. Mangde gave us an overview of the different dishes to be prepared (appetizer, entree, and dessert) and off we went into action: mincing and slicing, grinding and crushing. A food processor was welcome for the sauces, but some other grating and whipping steps were hands on tiring! Mangde kept the flow of activities alternating between us though my dad apparently enjoyed the stir frying part a lot, monopolizing the stove! While cooking and preparing, I liked the way Mangde explained the different dishes and ingredients in more details, often adding Balinese cultural aspect as well as personal notes to it. The best part finally arrived with the actual meal that we complemented with
a nice bottle of wine (not included). Not only the food was well prepared but also well presented and well eaten in front of the hotel pool with the entire area just for ourselves! I highly recommend this class, even more with the market shopping which makes it a very rich experience and makes you appreciate what you prepare and eat even more!
A highly informative class with Chef Mandge, who shared his secrets to the perfect Indonesian cuisine. We learned about new cooking methods and tasted delicious flavors. I will no longer cook noodles and rice the same way! The meal was fabulous, which we complemented with a refreshing white wine. The view of the private swimming pool added to the luxury of the day, which had been extraordinary! We had the best day possible, thanks to the whole Amala team!
