Make your own way to the cooking school in Central Madrid to begin your Mediterranean cooking class and meet with your instructor, a professional chef. After discussing the recipes that you’ll be creating, follow your guide to the Torrijos market to shop for fresh ingredients. Along the way, listen as your guide points out the various foods, herbs and sauces on sale, and help select the ingredients for your class.

Back at the cooking school, set to work creating an array of dishes from all corners of Spain. First on the menu is an Andalucian specialty, gazpacho, a tasty tomato soup served cold, followed by local delicacy, huevos rotos (‘broken’ eggs) with Iberico ham. You’ll also learn how to make arroz negro, the quintessential Navarra dish of black rice with fresh squid and Ali Oli sauce. Top it all off with a scrumptious apple flambe, following a traditional recipe from Asturias in Northern Spain.

After getting hands-on in the kitchen and picking up a host of tips and techniques from your chef, sit down to feast on your 4-course dinner, accompanied by a tasty sangría cocktail. Finally, you’ll be given the recipes to take away with you, so you can try out your newfound skills on friends and family back home.
